Roast Pork with Rosemary

 Ingredients:

  • 3 ½ to 4 lbs pork loin roast
  • 10 cloves garlic peeled and mashed
  • 3 TBSP dried rosemary
  • 1 TBSP Lucy’s Krazy Sea Salt 1
  • TBSP Fresh Ground Pepper
  • 2 TBSP Olive Oil

Instructions:

Place roast on rack in shallow roasting pan and insert a meat thermometer in thickest part of the roast, but not touching the bone.

Mix garlic, rosemary, pepper, Krazy sea salt and oil. Rub evenly over the meat and let stand at room temperature 1 ½ – 2 hours.

Roast uncovered in the oven or on the grill (I did mine on the grill), at 325 degrees for 1 ½ hours or until meat thermometer reaches 150 degrees.

Increase oven temperature to 400 degrees and roast 10-15 minutes until temperature reaches 175 degrees.

Cover and let rest 20-30 minutes before carving.

Good served with pasta or rice and broccoli or cauliflower.
