Orzo is a rice shaped pasta, light and flavorful. I first experienced this pasta at my favorite restaurant in Scottsbluff, Nebraska. I wanted to recreate this experience using my own style of cooking. You can substitute any vegetables you like, including broccoli, peppers, etc…

Instructions:

Cook Orzo according to package directions, rinse and cool.

Place in medium bowl, add chopped vegetables, olive oil and seasonings. Let sit for at least 30 minutes before serving.
