Spicy Stuffed Hubbard Squash

Imagine the look on my face when I went to the squash garden and found these little beauties on the other side of the fence. It took two of us to harvest them, but the real surprise is when I made this recipe and tasted this winter squash for the first time. It has a bit milder flavor than acorn, but absolutely delicious! Perfect for sharing with friends and family over the holidays!

Ingredients:

  • 1 Medium Hubbard Squash – cut in half and seeded
  • 1 lb Sausage – ground
  • 3 Medium Tomatoes – cut into small pieces
  • 1 Small Zucchini – cut into small pieces
  • 1 Small Summer Squash – cut into small pieces
  • 3 Hot Serrano or other Chili Peppers – cut into small pieces
  • 3 Small Carrots – cut into small pieces
  • 1 Small Onion – cut into small pieces
  • Grated Parmesan Cheese
  • 2 TBSP Jamaica Me Krazy Seasoning
  • Salt and Pepper
  • Garlic Granules
  • 1 Bell Pepper – cut into small Pieces

Instructions:

Brown sausage, add remaining ingredients except cheese and saute until tender. Stuff the two pieces, cover with foil and bake at 350 degrees for 1 1/2 to 2 hours. Remove from oven, sprinkle with Parmesan cheese and serve. This will make enough for a large group or several meals for a few people. Very good re-warmed.
