Have you ever purchased those packaged taco seasonings at the grocery store and have to use the entire contents to get a nice flavoring for your Mexican dishes? If you answered yes, then you are in for a treat with this Taco Bake recipe using my Taco Seasoning. You only need 2 TBSP for the perfect combination of flavors. This dish only takes 30 minutes.

Ingredients:

  • 1 ½ pound ground beef
  • 1 14 oz can diced tomatoes or
  • 1 fresh large tomato skinned and peeled
  • 1 small can chile peppers, or 1 fresh cut into small pieces
  • 1/2 cup water
  • 1 cup sour cream
  • 2 TBSP Lucy’s Taco Seasoning
  • 8 oz shredded Colby-Monterey Jack cheese
  • 1 (18 oz) package corn tortilla chips

Instructions:

Preheat oven to 350 degrees.

In a medium skillet over medium heat, brown the ground beef and drain fat. Add the diced tomatoes with green chile peppers, water, sour cream and Taco Seasoning. Simmer 5 to 10 minutes or until beef is cooked through and no pink remains.

In the bottom of a 9×13-inch baking dish, place a layer of tortilla chips. Cover with a layer of meat mixture, then a layer of cheese. Repeat this process until the last layer is cheese.

Bake in the preheated oven for 20 minutes, or until the cheese is bubbly.
