Tomatillo & Black Bean Tortillas

  • 1 Can Black Beans with juice
  • 1 Pint Tomatillos (Peeled and sliced)
  • 2 lb Ground Beef
  • 1 TBSP Lucy’s Taco Seasoning
  • 1 tsp Sea Salt
  • 1/4 tsp Fresh Ground Black Pepper
  • 1 tsp Garlic Granules
  • 1 Medium Red Onion
  • Tomatoes
  • Cheese
  • Lettuce


Brown ground beef and onion, drain. Add tomatillos and sauté for about 10 minutes. Add black beans with juice and spices and simmer for 15 minutes. Grill tortillas for a few seconds on each side. Fill the tortilla with meat mixture, add tomatoes, lettuce and cheese, roll up and serve with your favorite salsa.
