This is a very simple recipe and is wonderful, even if you didn’t like eggplant before, you will love this creation. Great served with grilled chili peppers and your favorite barbequed meat dish.
Mix a generous amount of olive oil and Lucy’s Cottage Cheese Seasoning in a bowl and let sit for at least 30 minutes.
In the meantime, peel eggplant and slice in long slices. With a basting brush, brush both sides of the eggplant with the seasoned oil.
Place on grill until golden and serve.
